Avocado Salad

1 c cherry or grape tomatoes, sliced in half lengthwise

3 large avocados diced into 1 inch pieces

3 ears fresh corn, cut off cob

2 large cucumbers peeled and sliced to ½ inch thick

1 small red onion sliced thinly and diced

cilantro (optional)

1.5 T Apple cider vinegar

¼ c + 2 T Olive oil

Fresh Lime juice (1 small lime)

Salt and pepper to taste

 

Mix cucumbers and onions in a large bowl.  Add fresh corn, apple cider vinegar, olive oil, lime juice, salt, and pepper and mix.  Gently fold in avocados and tomatoes.  Serve chilled.

Serves about 8
