TAHINI BALLS

1/2 C tahini

1/4 C ground sunflower seeds

1/4 C ground pumpkin seeds

1/4 C ground almonds

7 drops of liquid stevia

Mix and roll into balls.  You can also roll them in coconut flakes or sesame seeds.

TEFF AND ALMOND BALLS

1 C cooked Teff grains

1 C almond butter

1/4 C almonds

1/4 C sunflower seeds

1/4 C sesame seeds

5-10 drops liquid stevia

1 T  raw honey

1/4 t vanilla

1/4 t cinnamon (optional)

Coconut flakes (optional)

Cook Teff grain to very hard, dry state (1/4 c Teff grains to 1 C water).  Grind the seeds and the almonds. Combine all ingredients and roll into one-inch balls.  Refrigerate and serve.  Variations:  Add 4 chopped dates or 1/4 C chopped raisins; roll balls in ground seeds or coconut flakes.  Teff is a very filling cereal grain that makes a great base for cookie treats. Instead of Teff, consider substituting cooked millet or amaranth.  Makes about 36 balls.
