Roasted Vegetables Russian Style

1 head cauliflower, cut into florets

2 onions, cut into chunks or slices

5-8 red potatoes, cut into chunks or slices

2 butternut squash, peeled & cut into chunks or slices

3-4 leeks, cut into chunks or slices

3-4 peppers (red, green, yellow, or orange or a combination cut into chunks or slices).

Mix the following for the sauce:

1/2 C lemon or lime juice

1/2 C coconut oil

3 cloves garlic

1/2 t tarragon

In a large bowl, toss sauce with veggies.  Arrange on cookie sheets or shallow baking dishes. Sprinkle with sea salt & pepper. Roast in 350 degree oven for 1 hour.
