Stir-Fried Comfrey and Garlic

This is a very popular vegetable treat at the Retreat for breakfast, lunch, and dinner.  We have a large comfrey patch that yields loads of comfrey leaves.  When you visit Peaceful Meadow Retreat, feel free to dig up a root to take home and start your own comfrey patch.  Plant it in a place that is border secured, for comfrey can be very invasive.

comfrey leaves

coconut oil

garlic

onions (white or red)

red peppers (optional – but they look beautiful)

sea salt

 

Pick and wash lots of comfrey.  It will cook down to a very small amount.  Chop the leaves into 3-4 inch pieces.  Chop lots of garlic and red onions.  Stir fry garlic and onions to brown slightly.  Add chopped comfrey and stir until limp.  (Does not take long).  Add sea salt to taste.

 

*Because of the pyrilizidine alkaloids in comfrey leaves (especially young leaves), we do not recommend that you eat comfrey daily.  Toxicity could lead to liver disease.
