Spinach and Jicama Salad

Salad:

10 c packed prewashed baby spinach leaves

1 medium Jicama peeled and cut into julienne strips, or larger

1 pint strawberries (sliced), or 1 large orange (peeled and cut in thirds)

½ c  large size flakes of dried coconut

1/3-1/2 c sliced almonds

Dressing:

2 T apple cider vinegar

½ c  olive oil

2 t honey

garlic

pinch salt

Blend dressing ingredients in a blender and lightly toss with rest of salad.

Decorate top of salad with ingredients set aside.

Serves about 6

 

Gently mix all salad ingredients in large bowl (put aside a little bit of each ingredient except spinach).
